Butternut Squash Soup

INGREDIENTS:

• 1 butternut squash, peeled, seeded, and cubed
• 1 yellow potato, peeled and diced
• 1 onion, chopped
• 2 cloves of garlic, minced
• 4 cups vegetable broth
• Salt and pepper to taste

DIRECTIONS:

1. In a large pot, sauté the onion and garlic until translucent.
2. Add the butternut squash, yellow potato, and vegetable broth. Simmer until the vegetables are tender.
3. Use an immersion blender to puree the soup until smooth. Season with salt and pepper before serving
